When people find out I’m vegan I am often met with the response, “Vegan? …But what do you eat…?”
As a vegetarian for 27 years and totally vegan for 6 and a half years I have to remind myself that it is understandable that people can be worried or confused by what vegans eat. However, as an avid cookbook collector, and keen new recipe maker, I have never eaten such an amazingly varied and delicious diet. Last year I made 200 new recipes and, so far this year, I’m up to 172!
So I have A LOT of cookery books! I find cooking really enjoyable and relaxing and I love feeding people with deliciously tasty and nutritional food.
I love vegan food and I love running so I’m going to share some of my favourite recipes to help people answer that common question, “So what do you eat?”
